Over-chill your wines when the sun is out

If the temperature in the north of England exceeds 20ºC (about 68ºF), we declare an immediate heatwave. Our local council issues emergency supplies of sunscreen and an army of ice cream vans is deployed, much in the same way that road gritters are when it snows. Absence rates at work soar and air conditioning units fail as they finally make a diffident, laboured switch from heating to cooling.

I write this in West Yorkshire, where temperatures today headed towards 30ºC/86ºF. Panic stations.

Half of my current worklife is spent in Florida where, at such temperatures, people reach for their woollen socks, and fur coats sell faster than beach towels.

In either geography, one thing to remember is that wine rises in temperature almost as quickly as mercury. That cheeky young Claret, opened at 16ºC, hits 25 in ten minutes of hot sun. A zingy Sauvignon Blanc, carefully crafted by Jane Hunter, or one of her countrymen, turns flat and lifeless, worthless, unless kept below 10 degrees. So, what can we do?

I recommend chilling any wine much cooler than serving temperature, and pouring in small measures. A barbecue at Wino Towers last weekend saw my Rhone red in an ice bucket for the duration of the afternoon. (OK, I lied, it took two bottles to last the full afternoon).

Try to keep your glasses out of direct sun and above all, drink as quickly as possible. At least this will make you forget how bad warm wine tastes.

Dignité 2009 Syrah and Latitude Wines

If you are looking for a high quality but eclectic wine shop somewhere in the world, then Hanging Ditch, near Manchester Cathedral, is a good first stab. But what if you live the other side of the Pennines, and your passport has expired? Recommendations flooded in for Latitude Wines in the centre of Leeds, under the railway arches. It meets the eclecticity brief. Walking into a cave (as in wine cellar) with a claustrophobicly low ceiling with wine racks and baskets strewn at jaunty angles with random offers, it’s the sort of place that I find impossible to walk out of without troubling the wallet.

Château Jouaninel, 2009

I had a long overdue mooch around Majestic recently. To be perfectly honest, a large proportion of the wines were predictable old fellas. But search hard enough and there are some real gems. I managed to walk out with 15 bottles having lightened my wallet to the tune of £222 (a double Nelson, for the cricketers out there).

One notable success story was this Fronton from the Deep South of France. Barely registering on the fruitometer, the overwhelming and delicious flavour is of a freshly baked rosemary focaccia served on an earthenware plate and drizzled with olive oil. Herby rather than fruity, and rich and spicy, it went superbly with a pepperoni pizza. £7.99 or £6.99 for two or more bottles.

I must also award a WART Medaille d’Or for a recommended drinking temperature clearly displayed on the back label. 17 Celsius is the advice. That’s at least five degrees cooler than your living room. Please chill a little. I’d actually open it at 15° and let it warm.

Chablis, 1er Cru, Domaine Collet 2009

From Domaine Collet et fils comes this interesting Chablis, 1er Cru Vaillons “Sécher”. 2009 RRP £21.

Wowzers, I thought Chablis was supposed to be steely, flinty, dry and crisp. This is smooth and buttery honey albeit with an appealing apple sourness.

The normally reliable Wine Searcher iPhone app couldn’t locate a British stockist but I understand it’s available from posh importer, Marc Fine Wines, living up to their claim that they service the on-trade with wines that can’t be sourced elsewhere in the UK. I hope you stumble across it at your local restaurant.

If you do, it’s probably better paired with cheese or chicken than shellfish. Les bourgognes recommend drinking at 10-11 degrees, so ignore restaurant advice,and take it out of the ice bucket if it is served straight from the blast chiller.

The Star at Harome, North Yorkshire

If there’s one thing better than a pint of Black Sheep, it’s a pint of Black Sheep served in a cosy warm Yorkshire pub, after a long Sunday morning walk on the moors.

The Star at Harome is just such a warming and friendly establishment but with the added bonus of being a restaurant that serves game, fish and fine wines. Oh and it has won just about every “best gastro pub” award going including, at one point, a Michelin star. It’s grouse season and I might just be in heaven. I am going to pay a celestial price too, £111 (a Nelson) plus service is more than a trifle in this part of the world.

A brace of Blaufränkisch

I discovered two things about Austrian wine last year. Firstly that there are some amazingly good reds. Secondly, that sourcing them in the UK is like trying to find a Greek MP at a “Bring back the Drachma” rally. But at an Austrian wine tasting I attended in London this year, I was assured that all the couple of hundred or so wines, are available in the UK.

Until EWBC 2010, Vienna, I was a virgin to Blaufränkisch, a grape that frequently makes Pinot Noir style wines – smooth, fruity, and deliciously drinkable. I have now tasted enough to know that it is nearly always a good choice when eating out in Austria and, if you can find it in the UK, a serious alternative to certain Burgundies (albeit frequently almost as expensive). I thought I would call out a couple to remind myself to look out for them.

Angelus, the restaurant – not the wine

I’m getting quite used to Opentable.  I don’t always book through the website  (or natty iPhone app) but it isn’t half useful for finding a table at short notice.  Especially in London.  Especially if you want to eat within a caber toss of where you happen to be.  And I happened to be in Lancaster Gate, if you are posh.  Or Bayswater if you are not.

Opentable threw up Angelus on Bathurst St.  Was it to be an homage to a great wine, or a mare?  (“Mayor” – see what I did there? Dicky daughters and all that).

The Mark Addy, Salford

Since reviews of the Mark Addy across the web seem to have divided opinion, I thought I would split my own personality and visit twice before drawing any conclusions.

On Mayday I returned to my Manchester flat and found blackbirds nesting on the balcony.  What better way to celebrate this joyous event than go to the only place in the city that is serving hand picked (maybe ‘nest robbed’ is a less elegant but more accurate description) gulls’ eggs.

Portuguese Man of WART

Delighted to see that my WART campaign has hit Portugal with the ever dependable André Ribeirinho writing about the importance of wine serving temperature.

Portugal is one country where I once had to pick a waiter up off the floor as he made a goalkeeping dive to try to prevent me from drinking red wine at an inappropriately warm temperature.  Good stuff!”
